Recipes: Between Shifts

Do not Panic! Here are some quick and cheap recipes for dinner.

Ground Chicken taco Bowl

So last night I was trying to figure out what to make with what we had because I really didn’t feel like going to the grocery store. I remebered that we had ground chicken and rice and i had just bought some black beans, which my daughter LOVES! When I got home i pulled out the ground chicken and put it in the skillet and started cooking it and chopping it up. I added a tablespoon of water andd a packet of taco seasoning and mixed. I used the pouch of rice because it is so quick and easy, put it in the microwave for 90 seconds. I opened the can of black beans, put it in a bowl, heated in in the microwave for about 1 minute 30 seconds. I grabbed bowls and put a layer of rice on the bottom, a layer of black beans and a layer of the ground chicken. I served it to my daughter and she had never had that before, she absolutely LOVED it and said “Mom! This is delicous! Can we have this again?” She ate her whole bowl and wanted more! This meal was less than 10 minutes, inexpensive and a very healthy, well balanced meal. You can always add other ingredients like cilantro, avocado, lime, cheese, lettuce and so much more. I just didn’t have those and my daughter isn’t a fan of all those ingredients.
